
My favorite eel dish is a Hitumabushi that originally from Nagoya Japan. this is my lunch yesterday. That is chopped eel Kabayai on the rice and sprinkle green onion on the top. I like these Yakumi ( green onion, and wasabi). Hitumabushi is with dashi soup generally, you can make ochazuke( pouring dashi to the eel and rice) the last bowl if you want.
Eel dishes are very expensive at restaurants, Everyone was happy if you could make it at home. I think you can make eel dishes very easily if you could get good eel and eel sauce!
It is said that if an eel shop catches fire, they will run away with a sauce pod without hesitation. The eel sauce is used as an additional sauce, so it is packed with eel extract. That’s why it’s rich and the restaurant one is delicious.
