In early spring, we can see many kinds of sweets everywhere. They are nice pastel colors and have cute shapes, which make us happy because it means spring is coming even though it’s cold still now. Ichigo (strawberry) daifuku is one of these sweets.
Spring starts on February 3 in the Asian calendar. We celebrate the coming of the new season. I made strawberry daifuku last week. I recommend making it by yourself because it’s easy to make, and everyone likes the taste. If you prepare yourself, you can eat a lot and no one will know 😉
Let’s see how to make it!
1. Wash the strawberries.
2. Make 8 balls of white bean paste (30g each) from the pre-purchased package, and cover the strawberries individually with white bean paste. You can use the black bean paste too!
3. Make mochi by shiratama flour, rice flour sugar and water. First mix all dry ingredients and then add water and mix well.
4. Warm it by microwave (500w) for 1.5 min 2 times and mix each time.
5. Spread the mochi on a flat surface coated with potato starch and divide the dough into 8 pieces.
6. Wrap strawberries wrapped in bean paste in mochi. Flip over so that you don’t see the seem.
6. Take each section and stretch it into a flat disk big enough to wrap around the strawberry.

White sweet bean paste 240 g
Shiratama flour and rice flour 100 g
Sugar 50 g
Water 120 cc
Potato starch powder 2 tbs
